Chef Eric Recipe: Red Grape Cranberry Salad

Gluten Free and Vegetarian*

Serves 4 as a side dish – great with grilled or roasted chicken



  • 2 cups red grapes, washed and removed from vine
  • 1 cup dried cranberries
  • 1ea Leek, sliced into rings, washed and dried
  • ¼ cup olive oil
  • 1/8 cup white balsamic vinegar
  • 2 tsp Sriracha
  • 3 tsp honey*
  • 1 tbsp grated ginger
  • ½ c fried or caramelized onions
  • Salt and pepper to taste

*If you want to make this a Vegan recipe, simply sub in agave for the honey



  1. Combine balsamic vinegar, honey, ginger and Sriracha and mix until well incorporated and reserve
  2. Combine remaining ingredients in a bowl
  3. Before serving drizzle with dressing and toss, taste for seasoning adding in salt & pepper as needed and toss again.
