Chef Eric Recipes: Tin Foil Dinners For Camping Out

Roasted Potatoes W/ Onion & Garlic

Serves 4 – Vegetarian & Gluten Free



  • 4 potatoes, sliced
  • 1 red onion, sliced
  • 1 tsp salt
  • 1 tsp white pepper
  • 4TBSP butter
  • 8 sheets of 12”x 12” tin foil



  1. Stack two pieces of tin foil on top of each other
  2. Combine all ingredients together and mix well
  3. Split potato mixture evenly into tin foil
  4. Pull ends up into center forming a pouch seating edges.
  5. Place package into grill and close grill
  6. Cook for approximately 30 minutes


Baked Brook Trout

Serves 4 – Gluten Free

(If you don’t catch any fish, use any store-bought thin fish filets you like)



  1. 4 Brook Trout, gutted, cleaned, pin bones removed
  2. 4 TBSP olive oil
  3. ½ c white wine
  4. 2tsp lemon juice
  5. 1 tsp Salt and White pepper
  6. 2 TBSP Garlic powder, granulated
  7. 4 tsp Flat parsley, chopped
  8. ½ tsp crushed red pepper
  9. 8 sheets of 8” x 8” tin foil



  1. Heat grill on to medium heat
  2. Brush 4 pcs tin with 1 TBSP oil each
  3. Place one piece of prepared trout in center of tin foil
  4. Combine all remaining ingredients and mix
  5. Brush flesh side of trout with mix
  6. Take remaining sheets of tin foil and place one on top of each fish filet
  7. Fold in sides to seal the two pieces of tin together forming a pouch
  8. Place trout pouch on grill for 20 minutes, or until fish is cooked through
